Strawberry "Ricotta" Toast

If you have a sweet tooth like me but want to reduce the amount of sugar on your plate this one is for you.


Protein, Fiber, healthy fats, antioxidants, prebiotics & a touch of green.


This is a vegan recipe but if you like dairy just substitute the plant based ricotta for regular ricotta.





Strawberry Ricotta Toast Recipe


Prep: 10 minutes

For the plant based ricotta you will need:

  • 1.5 cups of skinless almonds/ almond flakes

  • 1/3 cup water

  • 1 tsp salt

  • 1/2 tsp garlic

  • 1 Tbsp extra virgin olive oil

Other Ingredients

  • Sliced sourdough bread

  • 4-5 rocket leaves

  • Handful of chopped strawberries


Instructions

  1. Blitz the ricotta ingredients in a blender or food processor until you get a smooth consistency

  2. Spread the ricotta over a toasted piece of sourdough bread

  3. Top with 4-5 rocket leaves

  4. Add handful of chopped strawberries (or the fruit you want to use)

  5. Enjoy!
