Protein, Fiber, healthy fats, antioxidants, prebiotics & a touch of green.
This is a vegan recipe but if you like dairy just substitute the plant based ricotta for regular ricotta.
Strawberry Ricotta Toast Recipe
Prep: 10 minutes
For the plant based ricotta you will need:
1.5 cups of skinless almonds/ almond flakes
1/3 cup water
1 tsp salt
1/2 tsp garlic
1 Tbsp extra virgin olive oil
Other Ingredients
Sliced sourdough bread
4-5 rocket leaves
Handful of chopped strawberries
Instructions
Blitz the ricotta ingredients in a blender or food processor until you get a smooth consistency
Spread the ricotta over a toasted piece of sourdough bread
Top with 4-5 rocket leaves
Add handful of chopped strawberries (or the fruit you want to use)
Enjoy!
