One of the easiest ways to increase plants in your diet is to make sauces and dips that you can easily pull from the fridge and enjoy.
I suggest preparing this sauce ahead of time but either way it won't take long for you to whip the ingredients together.
Pasta with Roasted Butternut Squash Sauce Recipe
Prep: 15 mins
Cooking time: 50 mins
Ingredients:
1 large butternut squash
1 head of garlic
1 tsp salt
Handful of basil
Parmesan cheese for serving
Salt and Pepper
Extra virgin olive oil
Spaghetti 400g (enough to feed 4)
Instructions
Peel, deseed and chop the squash into small chunks for roasting
Line a baking tray with paper and add the squash and garlic (keep in it's skin) with 1-2 tbsp olive oil and season with salt and pepper
Roast in an oven at 200°F for about 40 minutes (you want it to be soft)
10 minutes before the squash is ready boil pasta in some salted water
Once the squash is ready transfer to a blender (you can use a food processor but you won't get the same consistency as the blender). Pinch 1 cup of pasta water and add to the blender. If too dry add more water.
Drain your pasta and mix with the squash sauce.
Serve immediately with grated parmesan and fresh basil.
